I wanted a good bagel. That's how it started.
In 2016, we moved from Chicago to Maryville, TN. It was an adjustment. I missed my sidewalks. But a couple of key things really stuck out to me... 1. There were very few (if any) car washes that cleaned the inside of your car, and 2. there were no bagel shops! When I mentioned this to other transplants or even East Tennessee natives, they wholeheartedly agreed and wished for them both. Opening a full-service car wash did not appeal to me or play to my skill set, but making good, authentic bagels did. So I made it my mission.
In January 2021, I established my sourdough starter. By March, I had created a respectable bagel that I wasn't embarrassed to share with people outside of my family. I had stumbled into having a cottage bakery and began selling to friends, friends of friends, and then to strangers!
But why stop at bagels? I tried making croissants, and that was a lot of fun. I played with cardamom and discovered a large population of people here who love it. And I found that REAL sourdough bread is something many people truly value.
I didn't know how far this baking would go or what it would turn into, but I knew something pretty cool was happening. And after nearly 25 years of working in the television industry, I gave this venture the most appropriate name I could think of, "untitled baking project"
Since this all started, I have received such tremendous support from this small community. I am so incredibly grateful for the new friends I have made BECAUSE of my baking.
What began with a sourdough bagel, has since evolved into so much more.
